Great for company. Usually serves 5 unless there is one hungry guy. You need an overnproof fry pan which you can put under the broiler.

Recipe Ingredients for Frittata, Carol's with Sausage Included

7 eggs
1 egg white
3/4 cup milk, non-fat
70 grams red bell pepper
1 green onion
50 grams broccoli
20 grams mushroom
5 links pork sausages
2 tsp olive oil
100 grams cheddar cheese, grated

Recipe Directions for Frittata, Carol's with Sausage Included

  1. Ahead of time: chop pepper, broccoli, green onion, mushroom, into small dice.

  2. Using scant brush of oil, saute musrooms to remove water (3 to 4 mintes). Set aside. In same pan (no additional oil needed) fry the sausages. Remove from heat, blot with paper towel, and chop into small bite-size pieces.

  3. When ready to make the frittata:

  4. Break eggs into bowl, setting aside one yolk for future use. Add milk and whisk. Add some chopped chives if desired. Heat the ovenproof frypan and pour in the egg mixture. Immediately sprinkle all other ingredients over the egg. Reserve about half the cheese.

  5. When omlette is sufficiently cooked on the bottom (3/4 done) sprinkle the reserved cheese on top, and put under pre-heated broiler (not too close). It will only need 3 to 5 minutes and is ready to be served immediately when done. cut into wedges and let people help themselves from the stove.
