Very easy and yummy. You can leave out the cheese for less calories.

Recipe Ingredients for Fritatta - Spinach, Ham and Swiss

1 cup Spinach
1 large Egg, Whole
1 large Egg, White
0.67 serving Deli Fresh Ham
0.25 large Onions
0.25 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 slice Deli Style Sliced Swiss Cheese
0.5 serving Pure All Natural Vegetable Oil
2 dash Pepper, Black

Recipe Directions for Fritatta - Spinach, Ham and Swiss

  1. Heat oil in non-stick skillet

  2. Finely chop onion and add to skillet, turn heat down to just below medium and saute onion for a few minutes.

  3. Dice ham in small pieces and add to skillet. Stir and saute with onion.

  4. IN a bowl, combine one whole egg and one egg white with milk and pepper. Whisk until foamy.

  5. Once ham and onions lightly browned, add spinach. (If using frozen spinach, defrost it in microwave for 30 second). stir the spinach with the ham and onions until soft.

  6. Dice the cheese in small pieces and sprinkle over spinach mixture.

  7. Whisk eggs again until foamy if needed. Pour over spinach.

  8. Reduce heat to low and let cook 10 minutes (the top will still be runny)

  9. Put oven to broil at 500. Place skillet directly under broiler, with the handle sticking out (leave door open) and let broil (approx 5 minutes) until golden brown.
