This is my standby recipe for when I have leftover roasted potatoes...

Recipe Ingredients for Fritatta

1/4 onion
2 small potatoes
6 mushrooms
1 clove garlic
1/4 teaspoon basil
1/4 teaspoon oregano
5 eggs
1/4 cup cheese
1 Salt and pepper

Recipe Directions for Fritatta

  1. Sauté onions, potatoes, garlic, and herbs in a frying pan until fully cooked.

  2. In separate bowl, beat eggs and milk.

  3. Add cheese to egg mixture and pour over potatoes in pan.

  4. Reduce heat to low and cover.

  5. Cook 8-10 minutes, until eggs are no longer liquid.

  6. Remove lid and place in broiler for 2-3 minutes, until cheese is browned.

  7. Serve immediately.
