3/5 cup parmigiano reggiano
9 large eggs
2 small tomatoes
4 tbsp olive oil
1 cup onion

Recipe Directions for Fritatta

  1. saute onion in olive oil until soft

  2. add tomato

  3. add beaten eggs with parmesan

  4. put under broiler to brown
