Recipe Ingredients for Fritatta

6 large eggs
2 large egg whites
2 tablespoons skim milk
1/2 cup light cheddar cheese
3/4 cup mozzarella cheese
1/2 tablespoon extra virgin olive oil
1/2 tablespoon light butter
1 medium baking potatoes, diced
8 oz turkey bacon, cooked and crumbled

Recipe Directions for Fritatta

  1. Preheat oven to 400 degrees F.

  2. In a large bowl, whisk together eggs, milk, cheddar cheese, 1/2 cup mozzarella cheese, salt, and pepper until foamy. Melt butter in olive oil in a cast iron pan over medium heat. Add the potatoes and cook thoroughly. Pour the egg mixture over the top. Pull the edges away from the sides of the pan with a spatula so the eggs flow to the bottom of the pan. When the frittata is half set, add the bacon.

  3. Transfer the pan to the heated oven. Bake for 10 minutes until puffed and golden. Top with remaining mozzarella and bake for an additional 5 minutes or until cheese is melted.

  4. Serve with fruit and yogurt parfaits.
