This is the best way to use left over meat - any kind! And any vegetables in the refrigerator.

Recipe Ingredients for Fritatta

6 ounce lean beef, diced and cooked, good to use left overs
3 eggs, beaten
1/2 cup mozzarella, stirred into eggs
1 cup mushrooms, diced
3 cups fresh spinach
1/2 cup onion, grated

Recipe Directions for Fritatta

  1. In an oven proof pan, sautee onion, mushroom until almost done, add meat and spinach and cook until spinach wilts.

  2. Pour egg and cheese mixture over the top the meat and vegetables, and transfer to oven and bake at 350 for 15 minutes. Finish under broiler until golden brown on top
