easy way to use leftover baked potatoes and have a great brunch.

Recipe Ingredients for Fritatta

3 large eggs
1 egg white
1 medium potato, baked
1 small onion, diced
1/2 medium green pepper, diced
3 oz. cremini mushrooms, sliced
2 oz. andouille sausage
1 oz. cheddar cheese, shredded
1 tbsp. nonfat sour cream

Recipe Directions for Fritatta

saute onion, green pepper and mushrooms with sausage in an 8" open-proof skillet. Peel and dice potato and add to veggies until heated. stir in sour cream. beat eggs until frothy, pour over mixture. bake at 350 for 15-20 minutes.
