8 ounces asparagus
4 ounces ham
1 egg
1/2 cup egg substitute
1/2 cup skim milk
160 g rice
2 tbsp parmesan cheese
1 tsp butter
1/2 tsp lemon peel

Recipe Directions for Fritatta with Ham and Asparagus in a Rice Crust

  1. Cook the rice, blanch the asparagus.

  2. Butter a skillet, line with the rice, add in the asparagus and ham.

  3. Whisk together the eggs, lemon zest and milk, pour into skillet. Cook over medium heat until edges are set, broil until set, top with parmesan cheese and broil until melted.
