Easy egg dish made with egg whites, low in fat.

Recipe Ingredients for Fritata

3 large Egg, White
1 large Egg, Whole
0.15 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
0.1 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.15 cup Wheat Flour, White, All-purpose, Enriched, Bleached
0.1 cup (8 fl oz) Water
0.15 cup slices Squash, Summer, Zucchini, Includes Skin

Recipe Directions for Fritata

  1. Saute vegetable in over safe 6-8inch skillet to personal taste. Remove from heat.

  2. whip egg whites, flour, water and salt & pepper together

  3. Pour egg mixture over vegetables.

  4. Bake at 350 for 20 minutes

  5. Sprinkle top lightly with cheese if you want for the last 5 minutes

  6. Cut into quarters, serve hot
