Yummy Meatball soup! This recipe is for a medium to large pot, you could make just half the recipe if you only have a smaller pot.

Recipe Ingredients for Frikadellisupp

6 cup Soup, Beef Broth Or Bouillon
1 large Onions
2 stalk, medium (7-1/2" - 8" long) Celery
2 carrot (7-1/2") Carrots
2 Potato medium (2-1/4" to 3-1/4" dia) Potato, Flesh And Skin
600 grams Beef, Ground, 80% Lean Meat / 20% Fat, Crumbles
1 large Egg, Whole
1/2 cup Bread Crumbs, Dry, Grated, Plain
1/2 cup (8 fl oz) Water
3/4 tsp Pepper, Black
1 1/4 tsp Salt, Table
5 grams Dill Weed, Fresh

Recipe Directions for Frikadellisupp

  1. Vegetables:

  2. Dice vegetables. Add to liquid and boil for about 30 min until vegetables are tender. Add spices and simmer.

  3. Meatballs:

  4. Mix all ingredients thoroughly.

  5. Form small meatballs, add to soup, boil 15 minutes. When soup is finished sprinkle freshly chopped dill on top.
