454 grams Mayocoba (Peruano) Beans
1 medium White Onion
1 medium raw Bell Pepper Green
3 tbsp Vegetable Oil, Canola
1 tsp Oregano
1 slice (6-1/4" x 4" x 1/16") Ham, Sliced, Extra Lean
113.5 grams Banana Squash
1 medium Russet Potato
1 tsp, crumbled Bay Leaf
2 grams Ground Cumin
3 clove Garlic
5 grams Coarse Kosher Salt

Recipe Directions for Frijoles Peruano #1

  1. Wash and clean the beans, remove damaged beans.

  2. Place in stock pot with water, the ham [and chorizo that's not listed in the recipe], and bay leaves over medium heat, cooking for 30 minutes.

  3. (They will look ugly at this point.)

  4. Add remaining ingredients, cook 30 minutes more.
