Mexican style beans much lower in sodium than canned.

Recipe Ingredients for Frijoles Mexicanos

900 grams (2 pounds) Giant dried pinto beans
4 clove Garlic
1 large Onions
60 3 Tbsp Bacon Fat[69498] oz

Recipe Directions for Frijoles Mexicanos

  1. Wash beans (2 lbs) and remove any that don't look right (shriveled) along with loose skins.

  2. Put beans in a LARGE pot and add about 14 or 15 Cups of water (almost 4 quarts) and the garlic -- whole, crushed, sliced, minced, whatever. Use more garlic if you can.

  3. OPTIONAL: Add 1/2 to 1 tsp. cumin powder.

  4. OPTIONAL: Add 1 tsp salt.

  5. Bring to a boil, turn down to a simmer and cooks over low heat for about 90 minutes.

  6. Add bacon fat (not bacon, the database didn't have it listed as bacon fat and the amount should be about 4 Tbsp.), mince the onion and add it too.

  7. Continue cooking until the beans are tender -- about another 90 minutes. Keep a watch on them and stir them from time to time. Add water if they start to stick because the end result should be kind of soupy.

  8. Freeze in half-pint or pint freezer boxes so you'll have plenty when you need them.
