This is my mother's kidney beans recipe. Colombian style

Recipe Ingredients for Frijoles Dulces (Sweet Red Kidney Beans)

454 grams Organics Red Kidney Beans Dry
3 medium raw Yellow Plantains
1 serving Chicken Bouillon Cubes
1 g Seasoning
6 plum tomato Tomatoes, Red, Ripe
1 large Onions
2 oz Tomato Ketchup
0.25 cup, packed Sugars, Brown
0.66 grams Kosher Sea Salt (Alessi)

Recipe Directions for Frijoles Dulces (Sweet Red Kidney Beans)

  1. Put small bag of beans on a medium sized pressure cooker. Add enough water to cover the beans (should get to about 2/3 of the pressure cooker total). Make sure to NOT overfill with water or the pressure cooker will erupt.

  2. Cover tightly and cook over high heat for about an hour. Turn heat off and allow all the steam to escape through the valve before opening.

  3. Open and pick one bean from the pot. If easily smashed it is ready. If it still hard on the middle, cover again and cook for 10 to 20 more minutes.

  4. If beans are ready, turn heat back on to medium low.

  5. Add seasoning with annato, chicken bouillon, chopped tomatos and chopped onions and cubed plantains. Stir. Cook for about 10 minutes.

  6. Add 1/4 cup ketchup and brown sugar. Stir. Add kosher salt to taste (a pinch to bring the sweetness of brown sugar out)

  7. Turn heat to low and let all ingredients simmer for up to 30 minutes to an hour. This will ensure a more cremier and caramelized consistency and taste of the beans.

  8. Serve with rice, steak and fried green plantains.

  9. This is by no means a diet recipe :)
