Recipe Ingredients for "fried" zucchini

2 large Squash, Summer, Zucchini, Includes Skin
0.75 cup Fiber One
1 large Egg, Whole
0.25 tsp Garlic Powder
0.25 tsp Onion Powder
0.08 tablespoon Oregano
2 dash Salt, Table

Recipe Directions for "fried" zucchini

  1. Preheat oven to 350.

  2. Cut zucchini into half inch circles and blot dry with a paper towel.

  3. scramble egg in a medium bowl and season with a dash of the garlic, onion, oregano, salt, and pepper.

  4. In another medium bowl combine ground up cereal with salt, pepper and 1/4 tsp each of the garlic, onion, and oregano. Mix well.

  5. Toss zucchini circles in the egg wash until coated well.

  6. Remove circles one by one (shaking off excess egg wash), coat with cereal crumb mix, and place on a cookie sheet greased with nonstick spray.

  7. Bake for 10 minutes then turn circles over and bake another 10 minutes, or until crispy.
