Yummy little faux-fried zucchini rounds, baked right in your oven!

Recipe Ingredients for "Fried Zucchini"

1/2 cup cornmeal
1/4 cup whole wheat flour
1 tsp salt
1 tsp dried basil
2 zucchini
1 egg
4 tsp olive oil

Recipe Directions for "Fried Zucchini"

  1. Mix cornmeal, flour, salt, pepper and basil on a plate. Set aside.

  2. Beat egg in a small bowl.

  3. Slice zucchini into 1/4 inch thick rounds.

  4. Dip zucchini in egg and then into cornmeal mixture, coating evenly.

  5. Line a baking sheet with parchment paper and coat with olive oil.

  6. Bake at 425 F 20 minutes, flipping once, until golden brown.
