Fried Zucchini Recipe

Spicy! Lighter and crispier version of a fried zucchini. (Would also be great with parmesan cheese added to batter. Try Smart Balance canola oil for a better, less healthy, fry)

Recipe Ingredients for Fried zucchini

1/4 cup bread crumbs
2 tbsp corn meal
1 tbsp whole wheat flour
1 tsp garlic powder
1 tsp minced onion
1/2 tsp sage
1/2 tsp oregano
1/2 tsp basil
1/2 tsp parsley
1/2 tsp ground pepper
1/4 tsp crushed red pepper
1/4 tsp ground mustard
1/4 tsp paprika
1 dash salt
1/2 cup whole milk
1/4 cup extra virgin olive oil
1 zucchini, sliced 1/4 inch thick

Recipe Directions for Fried zucchini

  1. Combine dry ingredients in a medium mixing bowl. Stir together.

  2. Add milk and a few drops of the olive oil. Mix well.

  3. Heat olive oil in a skillet over high heat. Spread wet batter over both sides of zucchini, using desired thickness. Drop zucchini into hot oil. Fry for 30 sec.- 1 min on each side, making sure no one side sticks to the bottom or burns. (Tip: While frying one side, ladle some hot oil over the top of the zucchini to make for an even fry and easier flip.)

  4. Place zucchini on paper towels. Flip and serve.
