My Fried Tomatoes with Vegetables

Recipe Ingredients for Fried Tomatoes with Vegetables

2 tomatoes
1 potato
1 small onion
3 cloves garlic
3 tablespoons olive oil
1 zuchinni
1 green pepper
1 teaspoon parmesan cheese

Recipe Directions for Fried Tomatoes with Vegetables

Slice tomatoes 3/4" thick. Add 2 tablespoon oil to large pan over high heat and when the oil is fragrant fry both sides of the tomato slices until just browned on the edges working in batches. Slice onion and garlic and add to pan with an additional tablespoon of oil if necessary, add diced potato and sliced zuchinni and saute until just done, add green peppers and saute for 1 or two minutes more. Place three slices of tomatoes on plate in a circle with all edges touching, place 1/3 of the vegetables into the center of the tomatoes neatly and grate parmesan on top along with a sprinkle of coarse salt.
