Good for using up leftover spaghetti Also feel free to add some quickly blanched broccoli, garlic, etc. Get creative!

Recipe Ingredients for Fried Spaghetti

278 grams cooked spaghetti
2 large eggs
1/3 cup milk
1/3 cup parmesan cheese
2 tablespoons fresh parsley
4 tablespoons butter
1 fresh ground pepper

Recipe Directions for Fried Spaghetti

  1. Melt the butter in a heavy nonstick skillet

  2. In a small bowl, beat together the eggs, milk, cheese, fresh parsley and/or chives, and the pepper

  3. Pour egg mixture over pasta and toss it well

  4. When butter has heated past the point of foaming, add pasta and flatten into a big pancake

  5. Cook over med heat until the bottom forms a golden brown crust

  6. Flip the"pancake" over and continue to cook until that side also forms a golden brown crust

  7. Slide pancake out onto a hot plate, cut in wedges, and serve hot
