Recipe Ingredients for Fried Shrimp Dumplings

3 wrapper, eggroll (7" square) Wonton Wrappers
3 tbsp chopped Onions
0.25 cup, chopped Carrots
3 tbsp chopped Onions, Spring Or Scallions
1 clove Garlic
3 oz Shrimp, Mixed Species
1 tbsp Oil, Sesame
1 tbsp Soy Sauce

Recipe Directions for Fried Shrimp Dumplings

  1. Saute the onions, carrots, and garlic in a wok or saute until just cooked. Cool completely.

  2. Mince the raw shrimp very fine, or pulse in a food processor until finely chopped.

  3. Mix the raw shrimp and the cooled vegetable mixture together, adding the soy sauce and sesame oil.

  4. Cut 1 1/2 inch rounds out of the egg roll wrappers and place a dollop of the shrimp mixture in each. Fold the dumpling up however you like, using a mixture of flour and water to seal the edges to prevent spillage during frying.

  5. Deep fry the dumplings in a deep fryer or carefully watched pan of vegetable oil.

  6. Cool and serve.

  7. Cook's Note: Do not mix the vegetables with the shrimp while they are even the slightest bit warm, it will par cook the shrimp and the finished product will be dry. If using a food processor to process the shrimp, do not allow to run, but pulse--a running processor inevitably heats the product.

  8. If concerned about the deep fried version, these dumplings are equally delicious boiled in a pot of salted water.
