Quick, left over brown rice recipe. Left the rice out of the recipe because the calories being calculated were way out of whack. Don't forget to add the rice when you log this one.

Recipe Ingredients for Fried Rice with Tofu & Vegetables

1/4 yellow pepper, sliced
1/4 white onion, sliced
1 tsp garlic, chopped
1 tsp soy sauce
1/4 tsp black bean sauce
1 tsp olive oil
1/4 package firm tofu

Recipe Directions for Fried Rice with Tofu & Vegetables

  1. Heat the oil and add the tofu to brown it on both sides. Remove the tofu.

  2. Add garlic and onions to the hot pan, saute until translucent and browned.

  3. Add the other vegetables and toss in the heat for a minute.

  4. Add the soy, black bean and whatever sauce you're adding.

  5. Add the brown rice and toss it all over high heat until heated through.

  6. Serve
