A little labor intensive, but hopefully healthy.

Recipe Ingredients for Fried Rice

Additives:
1 cup rice
2 large eggs

Stir Fry:
1 teaspoon sesame oil
1 cup broccoli florets
6 baby carrots, finely chopped
2 celery stalks, chopped
1 cup watercress
2 tablespoon chopped onion
1 tablespoon soy sauce

Spices:
1/4 teaspoon garlic powder
1/4 teaspoon ground ginger
1/8 teaspoon cayenne pepper

Recipe Directions for Fried Rice

  1. Cook the rice and egg separately from the stir fry ingredients. (The egg is just scrambled and egg beaters can be substituted to lower cholesterol)

  2. Add the oil to a pan and stir fry the vegetables over medium heat. It helps to add a splash of water.

  3. Add the spices as you stir the vegetable mixture.

  4. When the vegetables are almost done cooking, stir in the soy sauce and let it simmer for a minute or so.

  5. Remove stir fry vegetables from heat and mix in the rice and scrambled egg. (Makes one serving for now and one serving for later.)
