Fried Rice Recipe

I use 1/2 cup Soy Vay Veri Veri Teriyaki sauce (it has less sodium).

Recipe Ingredients for Fried Rice

2 cups brown rice, cooked
1 tbsp coconut oil
1 lb boneless, skinless chicken breast, cubed
1 cup green onions, chopped
1 cup celery, chopped
1 cup frozen peas and carrots
1/3 cup teriyaki sauce

Recipe Directions for Fried Rice

  1. Cook 1 cup of brown rice with 2 cups of water to equal 2 cups cooked rice.

  2. Heat skillet over medium-high heat. Add oil. Add chicken in a single layer and let brown. Add green onions, celery, peas and carrots. Stir with chicken and let cook until no longer pink. Add rice and teriyaki sauce. Stir until combined, turn off the heat and cover with a lid. Let steam until veggies are tender.
