Homemade version of a favorite take-out item.

Recipe Ingredients for Fried Rice

2 c jasmine rice, organic
1/2 c shelled edamame, frozen
1/2 c green peas, frozen
10 baby carrots, chopped
1/2 sweet onion, diced
2 eggs
1 tbsp extra virgin olive oil
1 1/2 c organic chicken broth, low sodium, free range

Recipe Directions for Fried Rice

  1. bring chicken broth to a boil in a pot. when boiling, add rice, reduce to a simmer and cover. Simmer for 10-15 minutes. Remove from heat and let sit for 4-5 minutes

  2. heat oil in skillet over medium heat, add onion and sweat until translucent

  3. add carrots, cook for 3-4 min

  4. add peas and edamame, cook for additional 3-4 min

  5. whip eggs and fry in skillet, breaking up as it cooks

  6. Add rica and eggs to veggies over medium-high heat and stir constantly for 5 minutes

  7. Serve with your favorite meat
