A tasty dish made with cooked fragrant rice that is flavoured with chicken stock, diced veggies, prawns, eggs and sesame oil. I reccommend using canola or peanut oil but have used olive oil in the recipe as that's what I had on hand.

Recipe Ingredients for Fried Rice - Prawn, Egg and Veg

340 g jasmine rice
28 KNORR Chicken stock pot
1/2 tbsp extra virgin olive oil
3 cloves garlic, crushed
3 g ginger, crushed
170 g carrots, diced
150 g frozen green beans, chopped
150 g eggs, lightly beaten
90 g prawns, shelled and deveined
70 g canned corn
25 g spring onion, thickly sliced
1 pinch salt
1/4 tsp sesame oil

Recipe Directions for Fried Rice - Prawn, Egg and Veg

  1. Cook rice as per package instructions with the stock pot. Stir at least once during cooking to ensure stock is evenly absorbed. Cool completely.

  2. Heat oil in a large frying pan or wok. Add in garlic and ginger. Cook for 1 min.

  3. Add in carrots, beans, prawns and a pinch of salt. Cook till prawns are almost cooked through. Pour in eggs, allow to set a little and scramble lightly. Repeat once again.

  4. Add in rice. Stir well in a folding motion, being careful not to break up the rice too much.

  5. Add in corn kernels and spring onion slices. Cook for 5 mins, whilst stirring carefully.

  6. Remove from heat and stir in sesame oil
