potatoes, eggs and veggies scrambled into breakfast

Recipe Ingredients for fried potato breakfast

1 medium potato, diced
1 tbsp onion, diced
2 tbsp red bell pepper, diced
2 medium eggs
2 oz low fat mozzarella, shredded
1 tbsp olive oil

Recipe Directions for fried potato breakfast

  1. scramble the eggs

  2. in a separate pan, put olive oil and potatoes to start cooking

  3. after about 5-10 minutes, add peppers and onions to sauté

  4. toss in eggs once onions become clear

  5. place mozzarella to melt over top, then serve
