"Fried" Eggplant Recipe

These are great for eggplant parm.

Recipe Ingredients for "fried" eggplant

1 cup Fiber One
6 cups eggplant
3 large Egg, White

Recipe Directions for "fried" eggplant

  1. crush cereal into breadcrumb like pieces (add seasonings if liked)

  2. cut eggplant into discs

  3. dip each slice in the egg whites, then into the cereal crumbs.

  4. place slices on greased cookie sheet

  5. cook at 375 for 30 minutes, then flip and cook for another 10-15 minutes.
