Crispy, fried eggplant slices. A good alternative to potatoes.

Recipe Ingredients for Fried Eggplant

1 large eggplant
2 eggs
1/2 cup breadcrumbs
1/4 cup canola oil

Recipe Directions for Fried Eggplant

  1. Peel and slice eggplant into 1/4" slices. Lay out on a cooling rack and salt each side and let sit for 30 minutes.

  2. Beat two eggs. Dip eggplant in egg and then in breadcrumbs.

  3. Quickly fry in hot oil until nicely browned on each side.

  4. Drain on paper towels and serve.
