Basic recipe my family uses for cooking eggplant.

Recipe Ingredients for Fried Eggplant

1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
1 cup Bread Crumbs Italian Style
2 tbsp Vegetable Oil, Canola
1 large Egg, Whole

Recipe Directions for Fried Eggplant

  1. Peel and cut the eggplant into approximately 1/4" slices. If it's a bigger eggplant in circumference, cut the slices into half-circles.

  2. Dip the slices into the scrambled egg, then the breadcrumbs (add some parmesan cheese if you want to the mixture).

  3. Once the oil is heated a bit in your frying pan, cook the eggplant until golden brown and delicious.

  4. Serve immediately or keep on a wire rack in a warm oven until ready to serve in order to prevent sogginess.
