Original recipe from Deborah Carson, Fort Morgan, CO (Sunday paper). I don't use 1 tsp poultry seasoning and I halved the cereal amount.

Recipe Ingredients for Fried Cornflake Chicken Strips

1000 grams chicken breast, boneless, skinless
2 1/2 cups cornflakes, crushed
3/4 cup flour
1 1/4 teaspoon seasoning salt
3/4 teaspoon pepper
2 eggs, beaten
1 tablespoon water
1/3 cup canola oil

Recipe Directions for Fried Cornflake Chicken Strips

  1. The oil quantity in the recipe is not correct - I had to estimate the amount of oil left in the batch after frying so that the nutritional calculations would be more accurate. You will need about 48 ounces of oil at 2 inches deep in a pot, fryer, or skillet to fry the chicken pieces.

  2. Trim chicken of gristle and fat (1000 grams chicken = about 3-4 chicken breasts). Cut into strips.

  3. Mix together crushed cornflakes (crushed quantity = 2 1/2 cups), flour, and seasoning. In separate bowl, beat eggs.

  4. Coat chicken strips with egg and then corn flake mixture. Press mixture firmly onto chicken to coat well.

  5. Pour oil into fryer of choice to a depth of about 2 inches. Heat oil to 250F. I recommend a thermometer - they are inexpensive and well worth the cost. Fry chicken strips 6 - 8 minutes or until done.
