Recipe Ingredients for Fried Corn and Tomatoes

1 tablespoons olive oil
1 tablespoon minced garlic
1/2 teaspoon minced chilies
4 cups corn kernels, from about 5 ears corn
1 1/2 cups tomato puree
1 tablespoons unsalted butter
1/4 cup thinly sliced fresh chives
1 pinch salt
1 pinch pepper

Recipe Directions for Fried Corn and Tomatoes

  1. High heat. Add olive oil, then the garlic. Sauté until the garlic is lightly browned.

  2. Add the chilies and sauté.

  3. Add the corn and cook until partially cooked, about 3 minutes.

  4. Add the tomato puree and simmer until the corn is just tender, about 2 minutes.

  5. Whisk in the butter and chives.
