Hearty fried rice with chicken and vegetables of your choice - recipe is one serving but may be doubled or quadrupled.

Recipe Ingredients for Fried Chicken Rice by Randy

1 cup Rice, Brown, Long-grain, Cooked
1 cup, chopped or diced Chicken, Breast, Meat Only
2 oz Carrots
0.5 cup, diced Celery
1 medium (4-1/8" long) Onions, Spring Or Scallions
2 1tsp Olive Oil
1 serving Soy Sauce

Recipe Directions for Fried Chicken Rice by Randy

  1. cook brown rice as directed

  2. cook chicken in skillet with water and a marinade of choice - oiless italian dressing is good

  3. cut chicken into bite size chunks

  4. mix chicken with vegetables of your choice with olive oil into wok

  5. stir

  6. when vegetables are soft add rice and soy sauce

  7. spread rice and all against sides of wok and cook until rice is not so soft or to taste
