Recipe from Food Network-Alton Brown. Turned out well but needed to be baked at finish to bring internal temperature up to 180 degrees without overcooking skin in cooking oil.

Recipe Ingredients for Fried Chicken

32 oz chicken thighs
2 cups low fat buttermilk
2 tablespoons kosher salt
2 tablespoons Hungarian Paprika
2 teaspoons garlic powder
1 teaspoon cayenne pepper
2/3 cup flour
2 cups solid shortening

Recipe Directions for Fried Chicken

  1. Place chicken pieces in buttermilk to cover and refrigerate for 12-24 hours. Melt shortening in fry pan and bring temp up to 325 degrees.

  2. Drain chicken and pat on seasonings that have already been mixed. Dredge chicken in flour and shake off excess.

  3. Place chicken skin side down in pan. Cook on each side for 10-12 minutes and check for internal temp. of chicken-should be 180 degrees.

  4. Drain on cooling rack set over cookie sheet.
