Had to share with the world. I didn't realize this would be so high in calories; the site I got it from (greenlitebites.com, amazing) estimated it at 270. The original calls for bulgur- I highly recommend trying it! This was soooo goooood.

Recipe Ingredients for Fried (Barley) with Peas and Pomegranate

1/6 onion
1 carrot
1 stalk celery
0.47 cup Barley
1 cup low sodium vegetable broth
3/4 serving Kroger All Natural Green Peas (Frozen)
1/2 tbsp low sodium soy sauce
3/10 tsp ground ginger
1/4 tsp garlic powder
2 oz pomegranate seeds

Recipe Directions for Fried (Barley) with Peas and Pomegranate

  1. Heat a non-stick skillet over medium heat, spray with non-stick cooking spray. Add the cooked bulgur and break apart, cooking for a minute.

  2. Add the peas, stir in. Sprinkle with spices and add soy sauce. Stir, and cook for a few minutes combining the flavors. Add the pomegranate, mix in. Cook for another minute.

  3. Remove from heat and EAT! :)
