Quick, healthy breakfast alternative

Recipe Ingredients for Fridge Muffins

1/2 cup olive oil
1/2 cup applesauce
1 cup fructose
2 eggs
2 tbsp flax seeds
6 tbsp water
5 cups whole wheat flour
5 tsp baking soda
1 1/2 tsp salt
6 cups All-Bran cereal
2 cups water, boiling
4 cups milk, non-fat
4 tbsp lemon juice
1/2 cup raisins

Recipe Directions for Fridge Muffins

  1. Combine the cereal and boiling water and let sit.

  2. Put 4 tbsp of lemon juice in a bowl and add enough milk to make 1 quart. Allow to sit and sour for 5 minutes.

  3. Cream together oil, applesauce and fructose. Add eggs, flax seeds and water.

  4. Combine in a large seperate bowl the flour, soda and salt. Make a well in the center.

  5. Add oil/applesauce to the dry and then the softened cereal and then the sour milk, mix until combined. Add the raisins.

  6. Bake at 400 degrees for 20 minutes, or until cooked through.

  7. Store extra batter in the fridge for up to 6 weeks.
