Fresh Vegetable Spinach Frittata Recipe

Frittata packed with protein, vitamins, and fiber. Very satisfying and incredibly easy. Great for a breakfast, brunch, or a quick dinner. Eat your veggies!! If serving toast or other items alongside, can split into four servings instead of two.

Recipe Ingredients for fresh vegetable spinach frittata

4 eggs
8 ounces mushrooms
5 ounces spinach
1 pint cherry tomatoes
1/4 cup reduced fat feta
1/3 medium onion
1/2 medium avocado
1/2 tsp olive oil

Recipe Directions for fresh vegetable spinach frittata

  1. Spray skillet lightly with olive oil spray and place over medium heat. When heated, add onion and mushrooms. After onions just begin to turn translucent, add spinach. Saute until spinach is wilted. Remove from heat and press into strainer to remove all water.

  2. Preheat oven to 375 degrees. Place non-stick oven-proof 8-9 inch skillet on cooktop. Spray skillet lightly with olive oil spray. Beat four eggs and pour into heated skillet. Pour sauteed vegetables into skillet with eggs and stir well to incorporate vegetables evenly. When eggs just begin to congeal slightly, place grape tomatoes into pan evenly distributed. Place into heated oven for about 20 minutes. Remove from oven, place sliced 1/2 avocado over top of frittato and sprinkle with 1/2 cup reduced fat feta. Place back into oven for about 5 minutes or until eggs are cooked through. Remove from oven, slice and serve.
