Recipe Ingredients for Fresh vegetable rice side dish

1 onion
2 carrots
1 garlic clove
1/4 cup lemon juice
1/2 tsp salt
2 tsp mint
1 tsp black pepper
1 cup uncooked rice
1 tsp olive oil
1/4 zucchini
1 cup peas
1/2 cup spinach

Recipe Directions for Fresh vegetable rice side dish

  1. serves 4, 241 cals per serving

  2. Fry onion in olive oil, add carrots and zucchini and frozen spinach, and fry off; add garlic, spices and rice, stir briefly then cover with water.

  3. Simmer on lowest heat for 20 minutes; add peas, turn off heat, and leave to stand for a further 5 minutes.

  4. Stir in lemon juice, season with s and p to taste and serve as a side dish.
