I usually eat both servings. Add some whole grain brain and/or a couple oz of cheese to round out a filling meal.

Recipe Ingredients for Fresh Tuna Salad

2 cups romaine lettuce
2 cups spinach
6 oz cucumber
6 oz cherry tomatoes
3 oz mushrooms
3 oz chunk light tuna
1/8 cup balsamic vinegar
1 tablespoon mayonnaise

Recipe Directions for Fresh Tuna Salad

  1. Chop lettuce

  2. Cut cucumber and mushrooms

  3. Drain tuna (or use pouch variety)

  4. Combine all ingredients in a large bowl and toss well. Vinegar and mayonnaise amounts are approximate, I like a lot of vinegar. I usually start with less and start tossing. Add just enough to coat well without leaving a bunch in the bowl. Amount necessary varies on how dry the other ingredients are.
