Serving = 471 g Homemade tomato soup

Recipe Ingredients for Fresh Tomato Soup

1 t olive oil
177 g chopped onion
1100 g tomato
5 serving Low Sodium Vegetable Broth
11 g garlic
1600 seeded and peeled tomato
1/8 t salt
1/8 t black pepper
1 t butter
1 t lemon zest
3 T fresh basil (thinly sliced)

Recipe Directions for Fresh Tomato Soup

  1. Saute onion in oil for 4 min. Add first batch of tomatoes and cook 2 min.

  2. Add garlic and vegetable broth and simmer covered for 30 min.

  3. Uncover and cook 45 min longer until reduced to about 6 cups. Drain mixture through a sieve and return to pan. Add second batch of tomatoes, salt and pepper and bring to a boil. Simmer 10 min.

  4. Remove from heat and stir in butter, basil, and zest. Serve.
