Recipe Ingredients for Fresh Tomato and Basil Quiche

6 servings pie crust
1 tsp olive oil
1 cup onion, chopped
1 clove garlic
3/4 cup mozzarella cheese, low fat, shredded
1 cup tomato
1/4 cup basil leaves, shredded
1 cup fat free evaporated milk
1 1/2 tsp cornstarch
1/4 tsp pepper
2 eggs
1 egg white

Recipe Directions for Fresh Tomato and Basil Quiche

  1. Preheat oven to 350.

  2. Saute onion and garlic in oil until slightly brown. Spread over crust and sprinkle cheese on top.

  3. Arrange tomato slices over cheese and top with basil.

  4. Combine milk, cornstarch, pepper and eggs. Process in blender until smooth. Carefully pour over tomatoes in crust.

  5. Bake 45 minutes or until a knife inserted in the centre comes out clean.

  6. Let stand 10 minutes before serving.
