Recipe Ingredients for Fresh Tomato-Basil Chicken

5 Tomatoes, Red, Ripe
1 fresh basil - chopped (approximately 1/4 cup)
8 cloves garlic
1 tsp Splenda
2 tbsp Olive Oil
1/4 cup red wine
2 cups chicken (cooked)
1 grated parmesan
1 Polenta

Recipe Directions for Fresh Tomato-Basil Chicken

  1. Saute garlic in the olive oil

  2. Add tomatoes, wine, basil, and Splenda

  3. Simmer over medium-low heat, stirring occasionally for approximately 1/2 hour.

  4. Add chicken

  5. Serve over Polenta, Pasta or Rice with fresh parmesan
