A light and lovely salad using fresh spinach greens.

Recipe Ingredients for Fresh & Tangy Spinach Salad

1 lb fresh spinach
2 hard boiled eggs, chopped
113 g bacon, (5 slices) fried and crumbled
1/2 cup green onions, chopped
1/2 cup oil
1/2 cup vinegar
3/4 cup sugar
1 teaspoon salt

Recipe Directions for Fresh & Tangy Spinach Salad

  1. Remove large veins from the spinach and tear into small pieces.

  2. Combine spinach, eggs, and bacon. Add onion and toss lightly.

  3. Mix oil, vinegar, sugar and salt. Pour over other ingredients. Mix well.

  4. Refrigerate for at least an hour before serving chilled.
