A great topping for cold boiled pasta for a summer lunch. I serve it with rotelli or farfalle.

Recipe Ingredients for Fresh Roasted-Pepper Sauce

476 g red peppers, raw (or a mix of red, yellow and/or green)
600 g tomatoes
22 g basil, fresh, finely chopped
1 1/2 tsp olive oil
1 clove garlic, crushed or finely chopped

Recipe Directions for Fresh Roasted-Pepper Sauce

  1. Roast the peppers and peel, seed and chop them

  2. Peel and chop the tomatoes

  3. Mix the ingredients together

  4. Season with salt and freshly ground pepper
