Easy, great tasting sweet pickles.

Recipe Ingredients for Fresh Refrigerator Pickles

2 cucumbers
1 green pepper
1 onion
1 tbsp salt
2 tsp celery seed
1 tbsp mustard seed
1/4 cup sugar
1/2 cup white vinegar

Recipe Directions for Fresh Refrigerator Pickles

  1. Slice cucumbers about 1/8" thick, Slice pepper and onion. Put in a bowl and sprinkle with salt, celery seed, and mustard seed. Cover loosley with plastic wrap and set aside for 1 hour.

  2. In a small saucepan, bring vinegar to a boil then remove from heat, stir in sugar until dissolved. Allow to cool then pour over cucumbers after they have been sitting for an hour. Mix well, cover and refrigerate for 24 hours before serving. You can leave them in a bowl or put in to jars.
