On old recipe for great pumpkin bread. We use fresh cooked pumpkin baked in the oven without seasoning/oil and then shred, drain and freeze to use year round.

Recipe Ingredients for Fresh Pumpkin Bread

1 3/4 cup cooked pumpkin
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger

Recipe Directions for Fresh Pumpkin Bread

  1. Preheat the oven to 350 degrees F and grease three small (7x3) or two larger loaf pans.

  2. Mix together pumpkin, eggs, oil, water and sugar in a large bowl.

  3. Mix together flour, baking soda, salt, cinnamon, nutmeg, clove and ginger in a separate bowl.

  4. Stir the dry ingredients into the wet ingredients and mix well. Pour into the prepared pans.

  5. Baking times vary, but for small pans, 50 minutes works well. If making larger loaves, bake for 1 hour 20 minutes - in both cases, bake until a toothpick inserted comes out clean.
