Recipe Ingredients for Fresh Peas Soup

14 grams Earth Balance Margarine
3 cloves garlic, finely chopped
2 cups water
3 cups frozen peas, thawed
1 salt and pepper to taste

Recipe Directions for Fresh Peas Soup

  1. Melt the margargarine in a heavy bottomed sauce pan over medium heat. Saute about 3 minutes.

  2. Pour in the peas and the water, season to taste with salt and pepper. Increase heat to medium high, bring to a boil, the reduce heat to low, cover and simmer until the peas are tender, 12 to 18 minutes. Puree the peas in a blender in batches. Add back to the sauce pan and reheat. Season to taste with salt and pepper before serving.
