Mom's Recipe from Stephenson's Cookbook

Recipe Ingredients for Fresh Peach Muffins

1 Egg
1 cup milk
1/4 cup Vegetable Oil
2/3 cup Sugar
1/2 teaspoon Salt
1/4 teaspoon Cinnamon
1 teaspoon Lemon Juice
1/4 teaspoon Vanilla
2 cups Flour
3 teaspoons Baking Powder
1 cup Peaches

Recipe Directions for Fresh Peach Muffins

  1. Beat egg.

  2. Stir in milk, oil, sugar, salt, cinnamon, lemon juice, vanilla.

  3. Sift together flour, baking powder.

  4. Stir into milk mixture just until blended.

  5. Do not overmix.

  6. Fold in peaches.

  7. Fill muffin cups with muffin papers 2/3 full.

  8. Bake at 450 degrees about 20 min or until brown.
