Recipe Ingredients for Fresh Pea Soup with Mint

3 sprays cooking spray
1/2 T unsalted butter
1 c leeks
3 c chicken broth
5 c peas
1/3 c peppermint
1/2 t salt
1/4 t pepper
1/2 c skim milk

Recipe Directions for Fresh Pea Soup with Mint

  1. Coat a large heavy pot with cooking spray, set over medium heat, melt butter in pot.

  2. Add leeks, cook, stirring occasionally until transparent, 7-10 minutes.

  3. Stir in broth, increase heat to high, bring to boil. Stir in peas, cook until peas are tender crisp.

  4. Remove from heat, stir in mint, salt, pepper. Puree soup in pot with immersion blender, stir in milk.

  5. Serve warm or chilled; yields about 1 cup per serving.
