Use about 1/3 C of the filling in one rice paper wrapper (not included in the recipe) for a refreshing appetizer.

Recipe Ingredients for Fresh Lumpia - Filling Only

1/2 c onion, julienned
1 t garlic, minced
1 lb chicken breast
200 g jicama, julienned
25 g carrot, julienned
2 scallions, julienned
2 t oyster sauce
1 t fish sauce
1/4 t black pepper
10 lettuce leaves

Recipe Directions for Fresh Lumpia - Filling Only

Stir fry onion and garlic in wok for 30 seconds. Add chicken and cook until browned. Remove from pan. Stir fry jicama and carrot for 1 minute. Add green onion and cook until vegetables are tender crisp, about 2 minutes. Return chicken to pan. Add oyster sauce, fish sauce and pepper. cook for 1 minute. Cool. Wrap with lettuce in rice paper.
