I used the shredded chicken from my soup stock. You can use other spices if you prefer.

Recipe Ingredients for Fresh Herb Chicken Salad

2 cup chicken breast, meat only
3 T mayonnaise
1 small cucumber, diced
1 small red onion, diced
1/2 red pepper, diced
1/2 t oregano, fresh
1/4 t thyme, fresh
1/4 t tarragon, fresh

Recipe Directions for Fresh Herb Chicken Salad

  1. Use shredded chicken lightly packed to make 2 cups. Dice the vegetables to your liking and mince the fresh herbs.

  2. Combine all the ingredients and mix completely. Let the flavors blend for 1/2 hour or longer in the refrigerator.

  3. Serve on bread or lettuce leaves as you like.
