A simple sauce that is a good base for other flavours

Recipe Ingredients for Fresh & Easy Tomato Sauce

1/2 onion, chopped finely
1 clove garlic, crushed
2 tsps olive oil
1 pinch sugar
1 pinch salt
1 black pepper, freshly ground
1/2 tsp oregano
1/2 tsp basil
400 g tomatoes, chopped
2 teaspoons tomato puree

Recipe Directions for Fresh & Easy Tomato Sauce

  1. Heat the olive oil in a shallow saute pan and cook the onion on a low heat for a few minutes until starting to soften and go translucent. Stir frequently

  2. Add the garlic and cook for a minute or two more, stirring frequently

  3. Add the seasoning and stir to combine and release the flavours

  4. Add the tomatoes and tomato puree. Bring to a simmer and allow to simmer, uncovered for about 10 minutes on a low heat, stirring occasionally.

  5. After 10 minutes the sauce should have thickened and reduced

  6. Check the seasoning and add a little more pepper or salt if necessary

  7. Serve immediately

  8. Optional additions.... Add smoked chopped bacon with the onions and garlic for a bacon sauce. Add sliced mushrooms with the onion for a mushroom sauce. Stir in some cooked seafood during the last two or three minutes cooking time to heat through for a seafood sauce.
